Recipe: Gut Happy Pancakes

At Molly Rose Health, we know how miraculous healing your body can feel. We also understand that at times, it can feel like everyone else gets to indulge in anything they want, while you watch on the sidelines. That is why we are always trying to create recipes for everyone to enjoy! Whether you are vegan, paleo, or dealing with gut infections like candida and parasites, we want you to feel like you can partake in fun festivities too! Pancakes are somewhat of a holiday tradition over here. However, they can be pretty starchy which is fine for lots of people, but if you are dealing with one of the previously mentioned gut concerns, it can be hard to enjoy them. If this resonates with you, please know that in your honor, we created - these delish low carb, high omega 3, everyone-friendly, holiday morning pancakes. We hope they hit the spot! 


Ingredients: 

  • 1 tbsp melted coconut oil (unrefined) 
  • 1 tbsp vanilla extract 
  • 6 flax eggs OR 6 organic pasture raised eggs (Note: if you use the flax, it will have a “chewier” consistency than if you use the eggs. Both options are delicious!) 
  • 1 tsp Celtic sea salt 
  • 1 tsp baking powder 
  • 4 tbsp arrowroot powder 
  • ¾ cup tiger nut flour or almond flour 
  • 2 tbsp coconut flour 
  • 1 tsp cinnamon 
  • ¼ cup golden Lakanto monk fruit sweetener 
  • Yields 8-9 - 3 inch pancakes 


Instructions: 

  • In a medium sized mixing bowl, combine all dry ingredients (tiger nut flour, coconut flour, arrowroot powder, sea salt, monk fruit, cinnamon) and mix until contents are evenly dispersed. 
  • Separately, mix together the flax eggs (or eggs), vanilla extract, and coconut oil until smooth 
  • Combine the wet & dry ingredients and stir again until smooth 
  • Spray your large skillet with coconut oil or avocado oil cooking spray and heat over medium heat
  • Scoop the batter into your pan. 1 pancake = 2 tbsp of batter. 
  • Cook each side for 3-4 minutes. These take longer per side than “traditional pancakes”
  • Serve with warm berries and a drizzle of your favorite nut/seed butter (OR maple syrup if you are not sugar sensitive or dealing with candida & fungal infections)
